Jan’s ossobuco has been prepared sous-vide. Place the ossobuco in a preheated pan with butter. Heat it for about four to seven minutes on medium-high heat. Do not forget to turn it regularly. If you prefer to prepare your ossobuco in a microwave: Pierce a few holes in the film and place the whole thing on a plate in the microwave. Cook the product for 2 to 4 minutes at 630 W. Sous-vide is a preparation method whereby the food is vacuum-sealed first. It is then cooked in water at a controlled temperature. The advantages? Flavour, juices, vitamins and minerals are preserved.
Heat a wok pan and add a little olive oil, add the courgette and peppers. Stir-fry the vegetables until al dente. Sprinkle lightly with salt and pepper to taste. Serve the ossobuco on suitable plates surrounded by the fried vegetables. Sprinkle the dish with gremolata.
Prepare ossobuco alla milanese. Then, garnish with gremolata. Chop a bunch of parsley, one large or two small cloves of garlic as well as the rind of one lemon. You must be able to sprinkle the mix as you would with grated cheese. Yummy!
